If you are disappointed then take the same approach. If there is no one in management that can respond to your comments at the moment then, if is important enough to you, take the time to write a short letter and keep you comments to the point.
Please be reasonable and expect some return communication. If you are not satisfied take your dining business elsewhere and all parties will be satisfied.
