Roast Pork with Herb Crust and Spicy Ginger Applesauce

Shopping List

 1 Teaspoon Salt
 1 Teaspoon Dry Mustard
 1 Teaspoon Caraway Seed
 1/2 Teaspoon Sugar
 1/4 Teaspoon Pepper
 1/4 Teaspoon Dried Sage
  Salt And Pepper
1 Pork Loin Roast (4 To 5 Pounds)
3 Slices Candied Spicy Ginger, Minced
2 Cups Prepared Applesauce


Prepare the applesauce by mincing the candied ginger, combining it with the applesauce and it warming it through until the flavor are well melded. 
Set aside.

Combine all dry herbs and spices in a bowl and spread over pork.
Cover and let stand for 30 minutes.
In a large, ovenproof pan, sear the roast on all sides until well browned.
Place in the oven, fat side up, at 325 degrees F. for 1 hour.

Roast until internal temperature reaches 150-160 degrees.
Remove from oven and let stand 15 minutes before serving.
Slice on a bias, and serve with the spicy ginger applesauce

Serves 4 to 5 as a main course.
